Savory Skinny Creole Soul Pie

 
1 carton (16 ounces) egg whites, or 10 egg whites
1 to 2 teaspoons Creole or Soul Food seasoning blend
Freshly ground pepper, to taste
1/2 cup each: chopped cooked chicken or turkey, sliced mushrooms, chopped turnip greens or other greens or lettuce

 

Heat oven to 400 degrees. Whisk egg whites and seasoning blend together in a small bowl; transfer mixture to an oiled skillet over medium high heat. Let eggs cook until they thicken, about 2 minutes. Add the chicken, mushrooms and greens, gently stirring to combine ingredients. Lower the heat to medium. Cook an additional 2 minutes. Transfer to oven. Cook until frittata begins to lightly brown around edges and completely sets, about 5 minutes. Remove from oven; let rest 2 minutes before cutting into wedges and serving. Makes 4 servings.
